The Traditional Bavarian Recipe

Original Ingredients from Bavaria

  • Pork Knuckle: 1.2-1.5kg from Swabian-Hallisch heritage pork
  • Marinade: Bavarian beer, caraway, coriander, marjoram
  • Herb mix: Rosemary, thyme, bay leaves
  • Salt: Alpine salt from Bad Reichenhall

Traditional Preparation

24h Marinating: The knuckle is marinated overnight in Bavarian beer and spices

4h Slow Roasting: Slowly roasted at 160°C for maximum tenderness

Crust Formation: The final 30 minutes at high heat for the perfect crackling

The Schweinshaxe was my vision for the Salvator from the very beginning. A genuine Bavarian knuckle, crispy and juicy -- exactly as I knew it from my time in Munich. It took years to perfect the recipe, but now we can proudly say: This is the best Schweinshaxe in Bonn.

How heavy is a Schweinshaxe at your restaurant?

The regular knuckle weighs about 1.3 kg raw -- after cooking it is a bit lighter, but still a substantial portion! Most people can't finish it alone. We've seen some people order two though... no idea where they put it all. If you're coming as a couple and want a starter too, we recommend sharing one.

How long does preparation take?

Since our Schweinshaxen are freshly prepared daily and need 4 hours in the oven, we recommend making a table reservation. This way we can ensure your knuckle is perfectly prepared.

What side dishes are served?

Every Schweinshaxe comes with homemade sauerkraut, Bavarian potato dumpling, sweet mustard and a rich roast gravy. Fried potatoes are available on request.

Is the Schweinshaxe available gluten-free?

The Schweinshaxe itself is gluten-free. For side dishes, we can offer gluten-free alternatives. Please let us know about your dietary requirements when making a reservation.
